Innovative Olive Oil Production in Crete Enhances Quality and Efficiency
In the autumn months, olive harvesting occurs in Gramvousa, Kissamos, Crete, where a local agricultural cooperative’s new oil mill rapidly produces high-quality olive oil. According to Vasilis Koutsavtakis, the cooperative’s president, the mill processes olives within 15 minutes, minimizing oxygen exposure and preserving flavor. Despite climate challenges, including prolonged drought and high temperatures during critical growth phases, the current production levels are satisfactory. The cooperative anticipates fluctuating olive oil prices this season, reflecting the unusual weather patterns.
