In New Karvali, descendants of refugees from Cappadocia carry on traditional culinary practices, particularly the art of baking Kurabiedes. Gregoris Charakopoulos, a fourth-generation pastry chef, maintains recipes from his grandfather who settled in the area after the destruction in Asia Minor. The shop, established in 1955, is renowned for its high-quality shortbread cookies, attracting visitors from Greece and abroad. The crescent shape of the cookies carries historical significance, linking them to ancient deities and the cultural heritage of the region.
